These super sandwiches are great to serve as a meal while the weather is still hot.  They are light, yet filling and delicious. I wanted to share this post again for National Sandwich Day!super sandwiches, chicken salad, turkey, bacon, ham, panini

I like to call these super sandwiches because they are made with a little more than meat, cheese, and bread.  We do not eat sandwiches very often for supper, but have enjoyed these.  This time of the year everyone seems so busy and this could be an easy addition to your meal planning menu.  

I also felt these sandwiches deserved a fancier name.

This is a grilled panini filled with “smoked” ingredients like smoked turkey, smoked gouda, and smoked bacon.  So colorful with veggies and condiments added.

  1. 2 teaspoons butter
  2. 2 slices sourdough bread
  3. 2 slices deli smoked turkey, sliced thin
  4. 3 slices deli smoked gouda, sliced thin
  5. 6 leaves baby spinach
  6. 1 slice red onion, sliced thin
  7. 2 slices smoked bacon, cooked crisp
  8. 1/2 sun dried tomato, oil packed & drained, diced
  9. 1 teaspoon regular or chipotle mayonnaise
  1. Spray panini skillet with no stick cooking spray and heat over a medium heat.
  2. Spread butter on one side of each slice of bread. Place one slice of bread into skillet, butter side down. Layer with turkey, cheese, spinach, onion and bacon. Stir together the sun dried tomato and mayonnaise. Spread this on inside of remaining bread slice. Add top slice of bread to sandwich, butter side up.
  3. Cook on first side until golden brown, about 4 minutes. Carefully, turn sandwich and cook on other side until golden brown about 4 minutes.
  4. Remove from skillet, cut in half and enjoy

This grilled panini has sliced rotisserie chicken breast, spring mix, sliced tomato and a slice of mango.

The Caribbean Chicken

  1. 3 Tablespoons mayonnaise
  2. 1/2 teaspoon lime juice
  3. 1/2 teaspoon jerk seasoning
  4. 2 teaspoons butter, softened
  5. 2 slices sourdough bread
  6. 2-3 slices rotisserie chicken breast
  7. 1 thin slice red onion
  8. 1-2 thin slices fresh mango
  9. 2 slices baby swiss or pepper jack cheese
  10. 2 slices red tomato
  11. 1/4 cup spring mix
  12. 2 Tablespoons mango salsa
  1. In a small bowl, whisk together the mayonnaise, lime juice, and jerk seasoning. Set aside.
  2. Spray a panini press, grill pan or skillet with no stick cooking spray and heat to a medium high heat.
  3. Spread butter on one side of each slice of bread. Place one slice of bread into skillet, butter side down. Spread half of the mayonnaise on bread. Layer with chicken, onion, mango, and cheese . Spread remaining mayonnaise on inside of remaining bread slice. Add top slice of bread to sandwich, butter side up.
  4. Cook on first side until golden brown, about 4 minutes. Carefully, turn sandwich and cook on other side until golden brown about 4 minutes.
  5. Remove from the pan, open top slice of bread and add tomato, spring mix, and salsa. Serve immediately.

  1. 1 cup mayonnaise
  2. 3/4 cup sweet relish
  3. 2 Tablespoons diced onion
  4. 2 Tablespoons honey
  5. 1 1/2 Tablespoons sugar
  6. 1 teaspoon kosher salt
  7. 1/4 teaspoon coarse black pepper
  8. 3/4 cup celery, chopped
  9. 1/2 cup pecans, chopped
  10. 3 cups rotisserie chicken breast, chopped
  1. Place all of the ingredients except chicken into a large bowl. Stir to combine.
  2. Fold in the chicken and toss to coat all of the chicken. Chill at least 2 hours
  1. I like to combine all ingredients while chicken is still warm for better flavor.
  2. The amount of chicken you get may vary due to size of rotisserie chicken, so if you have a little more or less, it will work fine.

This super sandwich takes on a Southwest blend of flavors.  A little heat on this one.

Fiesta Grilled Chicken Sandwich/Hot Jalapeno Dressing

  1. 2 Tablespoons slaw dressing from jar
  2. 2 Tablespoons sliced,hot jalapenos from jar
  3. 1/2 teaspoon cilantro, chopped
  4. 1 teaspoon red onion, diced
  5. 1/4 teaspoon white vinegar
  6. 1/4 teaspoon lime juice
  7. 1/4 teaspoon jalapeno juice from jar
  8. 1 chicken breast, pounded thin
  9. 2 slices white cheddar cheese
  10. 1 ciabatta sandwich roll, split
  11. 2 Tablespoons Roasted Red Bell Pepper & Chipotle Spread
  12. 1/3 cup romaine lettuce, shredded
  13. 2 Tablespoons black bean/corn salsa from jar
  14. 1 slice red tomato
  15. 1 teaspoon Sliced Mild Pepper Rings from jar
  16. 1/3 cup zesty tortilla strips
  17. 2-3 hot chili peppers from jar (optional)
  1. Place the dressing, 1 Tbsp jalapeno slices diced, cilantro, onion, vinegar, lime juice, and jalapeno juice in a small bowl and whisk together. Set aside.
  2. Grill chicken breast on both sides until cooked. Transfer chicken to a plate and place cheese slice on top of it.
  3. To build the sandwich, open roll and spread both sides with roasted red bell pepper & chipotle spread. On the roll bottom, place lettuce, salsa, chicken, tomato, pepper rings, tortilla strips and remaining jalapeno slices. Drizzle the jalapeno dressing over the sandwich. Top with remaining half of roll. Garnish with hot chili peppers.

Sometimes we want to eat breakfast for supper, so this sandwich fits the bill.  Ham, egg, bacon, cheese, and baby spinach are the main ingredients.  Add mayo or basil pesto and a slice of tomato.

  1. 2 slices bread
  2. 1-2 teaspoons mayonnaise (or pesto)
  3. 6 baby spinach leaves
  4. 3 thin slices mozzarella cheese
  5. 3 thin slices ham
  6. 1 egg, fried with yolk cooked hard
  7. 3 slices cooked bacon
  8. 1-2 slices fresh tomato
  9. 2 teaspoons butter, melted
  1. Preheat panini pan, grill pan, or a heavy skillet. Spray with non stick cooking spray.
  2. Lay one slice of bread on a flat work surface. Spread half of the mayonnaise on this slice of bread. Layer the spinach, cheese, ham, egg, bacon, and tomato. Spread remaining mayonnaise on the other slice of bread and add top to sandwich. Brush with half of the melted butter.
  3. Lay sandwich, butter side down, on grill pan. Brush the remaining butter on top of sandwich.
  4. Grill sandwich until bread is crisp, golden, and the cheese has melted. About 3 minutes on each side.
  5. Transfer to a serving plate and cut in half

Serve these sandwiches with a side dish, some chips, or eat alone. 

Although these super sandwiches are a great meal in the summertime, just imagine how good they will taste with a bowl of hot soup in the winter.

  4. I should really know better than to read your posts before lunch! I love all your recipes and Grampy’s favorite is your breakfast panini has become our Saturday breakfast. We split one with hash browns and want more so badly we have them again on Sunday!
