SUPER SANDWICHES FOR A SUMMER SUPPER

These super sandwiches are great to serve as a meal while the weather is still hot.  They are light, yet filling and delicious.  super sandwiches, chicken salad, turkey, bacon, ham, panini

I like to call these super sandwiches because they are made with a little more than meat, cheese, and bread.  We do not eat sandwiches very often for supper, but have enjoyed these.  This time of the year everyone seems so busy and this could be an easy addition to your meal planning menu.

I also felt these sandwiches deserved a fancier name.

This is a grilled panini filled with “smoked” ingredients like smoked turkey, smoked gouda, and smoked bacon.  So colorful with veggies and condiments added.

  2. 3/4 cup sweet relish
  3. 2 Tablespoons diced onion
  4. 2 Tablespoons honey
  5. 1 1/2 Tablespoons sugar
  6. 1 teaspoon kosher salt
  7. 1/4 teaspoon coarse black pepper

  9. 1/2 cup pecans, chopped
  10. 3 cups rotisserie chicken breast, chopped
Instructions
  1. Place all of the ingredients except chicken into a large bowl. Stir to combine.
  2. Fold in the chicken and toss to coat all of the chicken. Chill at least 2 hours
Notes
  1. I like to combine all ingredients while chicken is still warm for better flavor.
  2. The amount of chicken you get may vary due to size of rotisserie chicken, so if you have a little more or less, it will work fine.

Although these super sandwiches are a great meal in the summertime, just imagine how good they will taste with a bowl of hot soup in the winter.

  1. Thank you for more great recipes! Yours I can always trust! I printed the breakfast panini one for use this week after a trip to the grocery store for croissants. I’m going to try it that way!

  2. These look delicious! Perfect for hot summer evening when you don’t want to cook – heat up the stove! I am excited that you use rotisserie chicken. I don’t want to make a chicken just to make sandwiches but, I will buy a rotisserie chicken from the store. I’m looking forward to making several of these. Yum

  3. Since Daddy is working tonight, sandwiches sound like a great dinner (my husband doesn’t think sandwiches are “dinner food”, ha ha) Thanks for the inspiration and sharing on Creative K Kids #TastyTuesdays

    1. Thank you! It is hard to think of a sandwich as dinner food but once in a while it works. My husband is the same way.

  4. I should really know better than to read your posts before lunch! I love all your recipes and Grampy’s favorite is your breakfast panini has become our Saturday breakfast. We split one with hash browns and want more so badly we have them again on Sunday!

  5. All 6 of them sound and look delicious! We often go with something lighter during the summer and these would be perfect. Thank you for sharing more great recipes.
