Ingredients
4cupspeachessliced (fresh or frozen)
1cupgranulated sugar
1teaspoonground cinnamon
1/2cupwater
1teaspoonvanilla extract
1can12.4oz/8 count Pillsbury refrigerated cinnamon rolls with icing
1/3cuppecanschopped (praline or honey roasted are great)
Instructions
Preheat oven to 350 degrees F. Spray a 10 inch cast iron skillet with no stick cooking spray.
Combine the peaches, sugar, cinnamon, and water in a medium size saucepan. Bring to a boil, reduce heat to low, and simmer for 6 minutes, stirring frequently. Remove from the heat and stir in the vanilla.
Open the can of cinnamon rolls and separate. Set can of icing aside. Cut each roll into 4 pieces. Arrange the rolls evenly to cover the bottom of the skillet, cinnamon side up.
Spoon the peaches and syrup evenly over the rolls.
Bake for 30-35 minutes, until rolls are baked and not doughy. DO NOT OVERBAKE. Remove from the oven and allow to set about 5 minutes.
Stir the icing and drizzle over the cobbler. Sprinkle the nuts over the top.
Serve warm. Serves 8

Recipe Tips and Variations
Buy the cinnamon rolls that have a can of icing included. I always use the 8 count Pillsbury ones.
Fresh, frozen or canned peaches can be used in this recipe. I think the fresh peaches taste the best.
You can also use other fruits such as blueberries for this dessert.
Another option is to use the can of cinnamon rolls and 2 (20oz) cans of a pie filling, such as apple. Sprinkle in a little cinnamon and some pecans for an apple cobbler.
These rolls cannot be prepared a day in advance as they will become very soggy. You can store the leftovers in an airtight container and refrigerate for 1 day. Reheat in the microwave or in the oven on low heat.
