These cute little Halloween Breakfast Bites are such a fun way to start your day during “spooky season”. A half size sheet pan is loaded with breakfast meats, veggies, eggs and cheese. It is baked and Halloween shapes are cut out with cookie cutters.
Preheat oven to 350 degrees F. Spray a half sheet size pan (mine is 9.5x15x1) with no stick cooking spray.
Scatter the sausage and ham over the bottom of the pan.
Arrange the peppers and baby spinach over the meats.
Sprinkle the cheese over the top of all ingredients.
In a large mixing bowl, using an electric mixer, beat together the eggs, mustard, salt, pepper, and half and half. Carefully pour this mixture over the other ingredients.
Bake for about 17 minutes, until egg mixture is set. Remove from the oven and allow to cool about 10 minutes.
Using Halloween cookie cutters, cut out the desired shapes. Place on a party platter or breakfast board to serve. May decorate eggs on the faces with ketchup or hot sauce if desired.
