HALLOWEEN BREAKFAST BITES

These cute little Halloween Breakfast Bites are such a fun way to start your day during “spooky season”.  A half size sheet pan is loaded with breakfast meats, veggies, eggs and cheese. It is baked and Halloween shapes are cut out with cookie cutters.

Ingredients

  • 1/2 LB ground sausage, cooked and crumbled
  • 1 cup ham, diced
  • 1/2 cup green bell peppers, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup fresh baby spinach, chopped small
  • 1 cup cheddar cheese, shredded
  • 6 large eggs
  • 1 tsp dijon mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp coarse black pepper
  • 1/2 cup half & half

Instructions

  • Preheat oven to 350 degrees F. Spray a half sheet size pan (mine is 9.5x15x1) with no stick cooking spray.
  • Scatter the sausage and ham over the bottom of the pan.
  • Arrange the peppers and baby spinach over the meats.
  • Sprinkle the cheese over the top of all ingredients.
  • In a large mixing bowl, using an electric mixer, beat together the eggs, mustard, salt, pepper, and half and half. Carefully pour this mixture over the other ingredients.
  • Bake for about 17 minutes, until egg mixture is set. Remove from the oven and allow to cool about 10 minutes.
  • Using Halloween cookie cutters, cut out the desired shapes. Place on a party platter or breakfast board to serve. May decorate eggs on the faces with ketchup or hot sauce if desired.
