Instructions
Spray a 10-inch cast iron skillet with no stick cooking spray. Heat grill to around 350 degrees and open lid to cook on. (May do these next few steps on a side burner of grill over medium heat if one is available).
Crumble and brown sausage. Remove to a paper towel lined plate and set aside. Wipe skillet clean with paper towels.
Place bacon in the skillet and fry until crisp. Remove bacon to plate with sausage, and leave grease in skillet. Add the vegetable oil.
Add the sweet potatoes and potatoes o'brien to skillet, cover and cook 7 minutes, stirring occasionally.
Stir in the sausage, ham, and apple. Using the back of a tablespoon, make 4 indentations in the mixture. Crack eggs, one at a time, and pour into each hole. Season with the salt and pepper. Cover with lid and place skillet on the grill. Close grill lid.
Cook for about 10-12 minutes, until eggs are cooked to desired doneness.
When eggs are almost done, remove the skillet lid, sprinkle with cheese and bacon, and return to grill until cheese is melted.
Carefully remove hot skillet from the grill and serve immediately.
