HONEY PECAN ROTISSERE CHICKEN SALAD

Rotisserie chicken, mayo, relish, celery, onion, pecans and honey make this delicious chicken salad. Perfect to serve on a cold plate in the summer. So many ways to serve this.

Ingredients

  • 1 cup mayonnaise
  • 3/4 cup sweet relish
  • 2 Tablespoons diced onion
  • 2 Tablespoons honey
  • 1 1/2 Tablespoons sugar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse black pepper
  • 3/4 cup celery chopped
  • 1/2 cup pecans chopped
  • 3 cups rotisserie chicken breast chopped

Instructions

  • Place all of the ingredients except chicken into a large bowl. Stir to combine.
  • Fold in the chicken and toss to coat all of the chicken. Chill at least 2 hours.
  • **I like to combine all ingredients while chicken is still warm for better flavor.
  • The amount of chicken you get may vary due to size of rotisserie chicken, so if you have a little more or less, it will work fine.

  • The chicken can be chopped at any size, depending on how you are using it. To get it finer, pulse at short intervals in a food processor.
  • The flavors will blend better if the chicken is still slightly warm when making this chicken salad.
  • Some ingredients people also like to add are grape halves, dill, red onion, or pickles.
Store the chicken salad in an airtight container in the refrigerator for up to 3-4 days total. Do not leave setting out for longer than 2 hours (1 hour if temperature is over 90 degrees).
