Ingredients

  • 1- 1 1/2 cups mayonnaise (start with 1 cup)
  • 3/4 cup sweet relish
  • 2 Tablespoons onion, diced
  • 1 Tablespoon honey
  • 1 Tablespoon sugar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse black pepper
  • 3/4 cup celery, chopped small
  • 4 cups rotisserie chicken breast, chopped small

Instructions

  • In a large mixing bowl, combine the mayonnaise, relish, onion, honey, sugar, salt and pepper. Stir until smooth.
  • Stir in the celery.
  • Fold in the chopped chicken until evenly coated. Add additional mayonnaise if needed to obtain desired texture for spreading.
  • Cover and refrigerate for at least 2 hours. Stir gently prior to serving.
  • May use on croissants, breads, crackers, and wraps.
