WEST VIRGINIA REUNION BEANS

West Virginia Reunion Beans are made with spicy sausage, a mixture of beans, and veggies and are slow simmered for hours in a crockpot to create this delicious side dish.

Ingredients

  • 1 pound spicy sausage
  • 1 link (6-8 oz) kielbasa (or turkey sausage)
  • 1 can (16oz) butter beans, drained
  • 1 can (16oz) chili beans, undrained
  • 1 can (16oz) pork and beans, undrained
  • 1 can (15.25oz) lima beans, drained
  • 1 can (16oz) kidney beans, drained
  • 1 can (16oz) navy beans, drained
  • 1 can (14.5oz) diced tomatoes
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse black pepper
  • 1/4 teaspoon garlic salt
  • 1 cup ketchup
  • 1 medium onion, chopped
  • 3/4 cup light brown sugar
  • 1 medium green bell pepper, chopped

Instructions

  • Assemble the ingredients. Crumble and brown the sausage in a medium size skillet; drain grease and set aside.
  • Cut the kielbasa (or turkey sausage) at a diagonal into 1-inch pieces. Set aside.
  • Chop the onions and green bell pepper. Measure the ketchup and the brown sugar.
  • Spray the inside of a 6 or 7-quart crockpot with no stick cooking spray.
  • Place the sausage and kielbasa in crockpot. Dump the cans of beans, seasonings, and tomatoes into the crockpot.
  • Add the brown sugar, onions, ketchup, and green peppers. Stir all of the ingredients together until well combined.
  • Cook on low, uncovered, for 5 hours. Stir the bean mixture occasionally.
  • Serve warm from the crockpot as a side or add cornbread and serve as a meal.

*This recipe is so easy to make. Basically, dumping all of the ingredients in a crockpot, stirring, and simmering on low.
These beans go well with hamburgers, hot dogs, ribs, pulled pork, chicken, and steak. My mother also served them with cornbread and fried potatoes.
The beans can be made a day or 2 in advance.  The flavors blend even better when made ahead.
