Creamed tomatoes are an old fashioned side dish recipe that I grew up on. Excellent side dish. Great with fresh or canned tomatoes.

CREAMED TOMATOES

Creamed Tomatoes is an old fashioned, southern recipe. Also known as tomato gravy. Fresh or canned tomatoes are simmered, then a cream sauce is added. Served over biscuits, or torn bread cubes are stirred in before serving.

Ingredients

  • 1 14.5oz can petite diced tomatoes
  • 1/2 teaspoon kosher salt
  • 1/8- 1/4 teaspoon coarse black pepper
  • 1 Tablespoon butter melted
  • 1 Tablespoon flour
  • 1 teaspoon sugar optional
  • 3 Tablespoons milk
  • 1-2 slices bread cut into 1/2 inch cubes

Instructions

  • Place tomatoes in a small saucepan. Season with salt and pepper. Bring to a boil over medium heat, then reduce to a simmer.
  • In a small bowl, whisk together the butter and flour until smooth. Add milk and whisk until combined. Stir into the tomatoes.
  • Cook for 1 minute, or until starts to thicken, stirring constantly. Remove from the heat. Fold in the bread cubes. Serve warm.

Notes

  • Both canned and fresh tomatoes can be used in this recipe. If using the fresh ones, dice 2 cups of tomatoes, including the juice, and place in the pan.
  • The creamed tomatoes can be served with the bread cubes in it, or over biscuits.

Place any leftover tomatoes in an airtight container and refrigerate for 3 days. Do not freeze.
