PULLED PORK PIMENTO CHEESE SLIDERS

Tender, slow cooked pulled pork with warm, melted, spicy pimento cheese and served on a slider bun.  Pulled Pork Pimento Cheese Sliders are perfect to serve at any get togethers this summer.

Ingredients

  • 2 oz pimentos (from a jar)
  • 4 oz cream cheese softened
  • 2 Tablespoons mayonnaise
  • 2 oz heavy cream
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8-1/4 teaspoon red pepper flakes (depends on how much heat is desired)
  • 1 1/2 cup sharp shredded cheese (shred fresh from a block)
  • 3 cups prepared pulled pork
  • 12 slider buns
  • 1 cup BBQ sauce (optional)
  • 1 cup sliced dill pickles (optional)
  • 1/4 cup jalapeno slices from a jar (optional)

Instructions

  • Remove the pimentos from the jar and place in a mesh strainer to drain liquid. If pimentos are large, cut into smaller pieces. Set aside.
  • Place the cream cheese, mayonnaise, heavy cream, dry mustard, garlic powder, onion powder and red pepper flakes in a large mixing bowl. Using an electric mixer, beat until the ingredients are well combined.
  • Stir in the shredded cheese and mix until well combined with the other ingredients.
  • Fold in the pimentos with a large spoon or spatula.
  • Place the pimento cheese mixture in an airtight container. Refrigerate if not making the sliders within an hour.
  • TO ASSEMBLE THE SLIDERS
  • Heat the pulled pork until it is warm. Spread about 1 teaspoon of pimento cheese on the bottom of the slider bun. Place about a heaping Tablespoon of the pork on it. (Add a little BBQ sauce if using it). Top with about 2 teaspoons of pimento cheese. (Add pickle slices if using). Add the top bun. Warm until cheese is melted.
  • Warm the slider to melt the pimento cheese. Heat in microwave about 12-15 seconds. May also place the sliders in a pan, cover with foil, and set on the grill or in the oven until the pimento cheese is melted. Heat in a 300-degree F oven for about 10 minutes.

Notes

Calorie count provided is an estimate and will vary based on cooking methods and brands of ingredients used.
Shredding the cheese from a block is much better than using a prepackaged bag if you can do this.
The meat and the pimento cheese can both be prepared 2 days ahead of time of making the sliders. Store each in airtight containers and refrigerate leftovers for up to 4 days.
 To serve several sliders at one time, use the Hawaiian rolls.  Slice the rolls with a serrated knife, horizontally in half.  Spread pimento cheese on the bottom, top with pulled pork and more pimento cheese. Place in a pan, wrap with foil and heat in a 300-degree F oven for about 10 minutes. Cut into individual sliders.
