Cheesy Chicken Asparagus Dinner..pan fried chicken breasts, fresh asparagus, simmered in a white wine sauce and smothered with melted Italian cheeses.
When you are looking for a one pan meal, this is it. Everything can be prepared in one skillet and served right from it. This Cheesy Chicken Asparagus Dinner can be served year round, but is especially good in the spring, using tender asparagus.
HOW TO MAKE CHEESY CHICKEN ASPARAGUS DINNER
INGREDIENTS:
vegetable oil
butter
boneless, skinless chicken breasts
kosher salt
coarse black pepper
Italian seasoning
flour
2 cups fresh asparagus
chicken broth
minced garlic
1 shallot
1/2 cup white wine
lemon juice
sour cream
mixed Italian cheeses (parmesan, asiago, romano)
DIRECTIONS:
Spray a large skillet with non stick cooking spray. Heat the oil and butter over a medium heat. Season chicken breasts with salt, pepper, and Italian seasoning. Place the flour in a small bowl and dredge chicken on both sides.
Add chicken to the skillet and cook until golden brown on each side, about 5 minutes per side. Transfer to a plate and cover with foil to keep warm.
Bring about 4 cups of water to a boil, in a medium size saucepan, Cook the asparagus 3 minutes, drain and set aside.
Next prepare the sauce in the same skillet.
Whisk the 2 Tablespoons of flour into the skillet until smooth. Add the chicken broth, garlic, shallot, wine, lemon juice, and sour cream. Cook for 2 minutes, whisking frequently.
(**May use chicken broth is place of the white wine if desired)
Place the chicken and asparagus into the sauce. Cook, uncovered, on low heat for 5 minutes, stirring occasionally.
Sprinkle cheese over the chicken breasts and asparagus, cover skillet, and cook on low heat until cheese is melted, about 2 minutes.
Transfer to a serving plate. Makes 2 servings. Recipe can easily be doubled for 4 servings.

- 1/3 cup sour cream
- 1 cup mixed Italian cheeses parmesan, asiago, romano
