Flaky pink salmon, eggs, panko, onions, and peppers are combined and formed into patties. They are then fried in a skillet with oil to create a crisp outside and tender inside.
Salmon Patties are an easy, delicious, budget friendly meal to serve. Salmon is a healthy option for a recipe, low in calories, and high in Omega-3.
They are actually one of my husband’s favorite meals. I grew up eating them made from salmon in a can. The flavor was good, but I hated the skin and bones that were in the can.
Several years ago, I discovered the salmon (without the skin and bones) was sold in a package at the grocery store. This is what I use to make my salmon patties, and I always keep a couple packages in my pantry.
INGREDIENTS:
(2) packets of Alaskan Pink Salmon
onion
coarse black pepper
red or green bell pepper
eggs
panko bread crumbs
vegetable oil
ingredients for toppings as desired
HOW TO MAKE SALMON PATTIES:
Open the salmon packets and place in a medium size mixing bowl. Flake with a fork. Add the onions, black pepper, bell peppers, and eggs. Stir with a fork to combine.
Add the panko bread crumbs and mix well.
*** I like to let this mixture chill in the refrigerator about 15 minutes before I make the patties.
Measure out (5) one-third cup size amount of the mixture, and place on parchment paper squares.
Roll each salmon ball into the bowl of panko bread crumbs, place back on the parchment paper.
Press gently to form a patty.
***I place the patties on a small sheet pan, cover, and refrigerate for at least 2 hours, They can be fried as soon as the patty is formed, but they stay together better if chilled first.
Spray a skillet with no stick cooking spray. Add the vegetable oil and heat over a medium heat. Gently place the patties in the skillet and cook 5 minutes. Turn and cook 4-5 minutes on the second side, until golden crispy brown.
Remove from the skillet onto a paper towel lined plate to drain the grease. Place on serving platter.
WHAT TO SERVE WITH SALMON PATTIES:
They be served plain, with ketchup or tartar sauce. I make a honey mustard sauce to drizzle over them.
Many people like to serve them with Creamed Peas. Potatoes, a salad or any green vegetable go well with them.

Equipment
- 4 small bowls
- I medium size plate
- 10 or 12 inch skillet
- spatula
- fork
Ingredients
- 2 (5oz) packages pink salmon
- 1/4 cup onion, diced
- 1/4 teaspoon coarse black pepper
- 1/4 cup red or green bell pepper, diced
- 2 large eggs
- 1 1/2 cups panko bread crumbs, divided
- no stick cooking spray
- 1/4 cup vegetable oil
- condiments as desired
Instructions
- Place the 2 packages of salmon in a medium size bowl. Flake with a fork.
- Add the onions, black pepper, peppers, and eggs, stir with a fork. Fold in 1/2 cup of the panko and combine ingredients well. Chill mixture for about 15-20 minutes if time allows.
- Measure mixture into (5) 1/3 cup size portions. Place on parchment paper squares. Pour remaining panko crumbs onto a plate, carefully, roll each salmon ball in the crumbs and place back on the parchment paper.
- Gently press each one to form a patty. Chill for at least 2 hours.
- Spray the skillet with no stick cooking spray. Add the oil and heat over a medium heat. Gently place the patties in the skillet and cook 5 minutes. Turn with spatula and cook 4-5 minutes on the second side, until crispy and golden brown.
