When the weather turns hot and no one wants to spend much time in the kitchen, these Ham Salad Sandwiches are a perfect solution. This easy, old-fashioned recipe comes together quickly with just a handful of ingredients and makes a delicious lunch or light supper.

Made with cooked ham, Dijon mustard, mayonnaise, Swiss cheese, and sweet relish, this version has a creamy texture with just a touch of tang. I especially love using leftover ham from a holiday meal, but it’s just as easy to prepare using a pre-cooked ham from the grocery store.

Growing up, my mother always kept simple salads like chicken salad, EGG SALAD, cheese salad, bologna salad, and ham salad ready in the refrigerator. They made quick meals so easy, especially during the summer months. I don’t make them quite as often as she did, but they are still a favorite in our home.

This recipe is a little different from traditional ham salad because it includes Swiss cheese and skips the celery and onions. It’s a simple twist, but one that adds so much flavor.

I like to buy a fully cooked ham ( KENTUCKY LEGEND) and divide it into portions to freeze. I cube, dice, or slice it and store it in labeled freezer bags. That way, I always have ham ready for recipes like quiche, omelets, casseroles, or this delicious ham salad. It’s convenient and much more budget-friendly than buying smaller packages.

I also measure out the amount of ham cubes I will need for this recipe, label, and put in Ziploc freezers bags.  When I want to make the sandwiches, I have these bags ready.

HOW TO MAKE HAM SALAD:

Assemble the ingredients:

Cooked ham
Shredded Swiss cheese
Mayonnaise
Dijon mustard
Sweet relish

INSTRUCTIONS

Cut ham into chunks. Place in food processor, pulse to chop into small pieces. Be careful not to chop it too much or it will become a paste like texture.

Place ham in a large bowl, add the cheese, 1 cup of mayonnaise, dijon mustard, and relish.

Gently stir ingredients together to combine well. Add small amounts of the extra mayonnaise if needed. Chill for at least 2 hours.

HELPFUL TIPS:
A great way to use leftover holiday ham is to make this recipe.
If you don't want to make the recipe at that time, cut the ham into cubes, measure the correct amount, and put it in a Ziploc freezer bag.  Place in the freezer for up to 3 months. Your ham is available when you do want to make the ham salad. 
Start with the 1 cup of mayo and add more as desired. I usually always add the 1 1/2 cups.
My family likes extra relish, so I go with the higher amount. You can adjust this to your desired amount.
