Family weekend breakfasts have always been a special tradition at our house. I especially love making this skillet breakfast on a summer or fall morning when we can sit outside and enjoy the fresh air.

Years ago, we traveled several times a year in our RV to Stonewall Resort here in WV and stayed at their beautiful campground. This was one of the breakfasts I made often, and it quickly became a favorite.

There is just something extra special about the smell of breakfast cooking on a grill early in the morning.

HOW TO MAKE A HEARTY GRILLED BREAKFAST SKILLET:

INGREDIENTS: 

  •  Ground sausage ( mild or spicy)
  • Bacon
  • Vegetable oil
  • Sweet potato
  • Frozen Potatoes O’Brien (with peppers and onions)
  • Ham
  • Apple, peeled and chopped
  • Eggs
  • Kosher salt
  • Coarse black pepper
  • Shredded cheddar cheese

INSTRUCTIONS
(The first few steps may be done on a side burner of the grill if desired).

  1. Close lid to heat the grill, spray skillet with no stick cooking spray.
  2. Crumble and brown sausage, drain on a paper towel and set aside.
  3. Fry the bacon, crumble and set aside.
  4. Add vegetable oil to skillet. Cook the frozen potatoes and sweet potato.
  5. Add sausage, ham, and apple to skillet.
  6. Using the back of a tablespoon, make 4 indentations in the mixture. Crack eggs, one at a time, and pour into each hole. Season with the salt and pepper. Cover with lid and place skillet on the grill. Close grill lid.
  7. Cook eggs until desired doneness. When eggs are almost done, remove the skillet lid, sprinkle with cheese and bacon, and return to grill until cheese is melted.
  8. Serve hot.

Ingredients

  • No stick cooking spray
  • 1/2 LB ground sausage mild or spicy
  • 4 slices bacon cut in small pieces
  • 2 Tablespoons vegetable oil
  • 2 cups sweet potato diced (or 1 medium sweet potato)
  • 3 cups frozen potatoes o'brien with peppers and onions
  • 1 cup ham chopped
  • 1 small apple peeled and chopped
  • 4 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse black pepper
  • 1 cup shredded cheddar cheese

Instructions

  • Spray a 10-inch cast iron skillet with no stick cooking spray. Heat grill to around 350 degrees and open lid to cook on. (May do these next few steps on a side burner of grill over medium heat if one is available).
  • Crumble and brown sausage. Remove to a paper towel lined plate and set aside. Wipe skillet clean with paper towels.
  • Place bacon in the skillet and fry until crisp. Remove bacon to plate with sausage, and leave grease in skillet. Add the vegetable oil.
  • Add the sweet potatoes and potatoes o'brien to skillet, cover and cook 7 minutes, stirring occasionally.
  • Stir in the sausage, ham, and apple. Using the back of a tablespoon, make 4 indentations in the mixture. Crack eggs, one at a time, and pour into each hole. Season with the salt and pepper. Cover with lid and place skillet on the grill. Close grill lid.
  • Cook for about 10-12 minutes, until eggs are cooked to desired doneness.
  • When eggs are almost done, remove the skillet lid, sprinkle with cheese and bacon, and return to grill until cheese is melted.
  • Carefully remove hot skillet from the grill and serve immediately.
