These cute little Halloween Breakfast Bites are such a fun way to start your day during “spooky season”. A half size sheet pan is loaded with breakfast meats, veggies, eggs and cheese. It is baked and Halloween shapes are cut out with cookie cutters.
My family loves to eat crustless egg bites, so I created these Halloween Breakfast Bites one morning. Children and grandchildren love to eat fun foods.
They can be topped with hot sauce or ketchup to decorate the tops.
INGREDIENTS:
Ground sausage, cooked
Ham, diced
Green bell peppers
Red bell peppers
Fresh baby spinach
Shredded cheddar cheese
6 eggs
Dijon mustard
Kosher salt
Coarse black pepper
Half & half
Supplies:
Use any fun Halloween cookie cutters.
HOW TO MAKE HALLOWEEN BREAKFAST BITES:
*Preheat oven to 350 degrees F. Spray a pan (9.5 x 15 inch) with no stick cooking spray.
*Spread the sausage and ham over the bottom of the pan.
*Arrange the peppers and baby spinach over the meats.
*Sprinkle cheese over the top of all ingredients.
*In a large mixing bowl, using an electric mixer, beat together the eggs, mustard, salt, pepper, and half & half.
*Carefully, pour the egg mixture over all of the ingredients.
*Bake for about 17 minutes, until egg mixture is set. Remove from the oven and allow to cool 5-10 minutes.
Cut Halloween shapes out of the baked eggs with Halloween cookie cutters.
Transfer to a party platter. Decorate tops with hot sauce or ketchup.
I did not do a great job decorating with ketchup, but the grandkids thought they were cute. My husband drizzled hot sauce over his.
I also used my Halloween cookie cutters to cut out pancakes and sausage patties. This is an easy way to fix a fun Halloween breakfast platter.
I frequently make Crustless Mini Quiche Bites, so these are another version of them. They are great to make ahead of time, and take to sporting events, road trips, camping, or to take in lunches.

Ingredients
- 1/2 LB ground sausage, cooked and crumbled
- 1 cup ham, diced
- 1/2 cup green bell peppers, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup fresh baby spinach, chopped small
- 1 cup cheddar cheese, shredded
- 6 large eggs
- 1 tsp dijon mustard
- 1/2 tsp kosher salt
- 1/4 tsp coarse black pepper
- 1/2 cup half & half
Instructions
- Preheat oven to 350 degrees F. Spray a half sheet size pan (mine is 9.5x15x1) with no stick cooking spray.
- Scatter the sausage and ham over the bottom of the pan.
- Arrange the peppers and baby spinach over the meats.
- Sprinkle the cheese over the top of all ingredients.
- In a large mixing bowl, using an electric mixer, beat together the eggs, mustard, salt, pepper, and half and half. Carefully pour this mixture over the other ingredients.
- Bake for about 17 minutes, until egg mixture is set. Remove from the oven and allow to cool about 10 minutes.
- Using Halloween cookie cutters, cut out the desired shapes. Place on a party platter or breakfast board to serve. May decorate eggs on the faces with ketchup or hot sauce if desired.
