Sausage balls have been an appetizer that has been around for many years. I remember my mother making them in the 1960’s. During the 1970’s and 1980’s they were served at every party I attended.

They have evolved over the years from the basic Bisquick recipe, are made with different flavored biscuit mixes, and served with dipping sauces. Cream cheese is now an ingredient added to most recipes.

Last week my husband and I were snowed in our house with 12 inches of snow. I wanted to do some baking and went through the ingredients I had on hand.

We wanted a savory snack to enjoy while we were binge watching movies, and these sausage balls came to my mind.

This box of Bacon Cheddar Biscuit Mix was in my pantry, and I was excited to try it. I had ordered it from Cabela’s a month ago. They also have a Jalapeno Cheddar one that I am going to try.

You can try any biscuit mix. I am sure the Red Lobster Cheddar Bay is delicious.

HOW TO MAKE BACON CHEDDAR SAUSAGE BALLS:

INGREDIENTS:
Cream Cheese.. Make sure it softened at room temperature so it will be easier to combine.

Ground Sausage.. (Regular or Spicy) Do not cook the sausage first.

Biscuit Mix…Trying a flavored mix will add extra flavor and some spice, but if you only have Bisquick, use it.

Cheddar Cheese (Mild or Sharp) Freshly grated is the best but may use the pre-shredded package.

INSTRUCTIONS:
Preheat oven and line 2 or 3 baking sheets with parchment paper.

In a large mixing bowl, using an electric mixer, beat the cream cheese until smooth.

Combine the sausage with the cream cheese.

Add the biscuit mix and cheddar cheese. Combine all ingredients well.

**At this stage, I use my hands to combine the ingredients. When I tried using the mixer, the ingredients clumped up on the mixer paddle.**

Create the sausage balls, according to the size you like. I used a large cookie scoop. You can also use a small cookie scoop or spoon.

Scoop dough and roll into a ball.

Place on the baking sheets. Bake for about 20 minutes, or until they are light golden brown. If you are using a smaller scoop, they may take less than 20 minutes to bake.

They can just be put on a platter and eaten or served with a dip.

We like to eat them with Ranch Dressing, Hot Pepper Butter, or Chic-Fil-A Sauce.

Can these be frozen?

Yes! I actually have a container full in my freezer right now.
They can be frozen before or after baking for about 2 months. If you are baking them from frozen, you may need to add about 3-5 more minutes to the baking time.

If freezing before baking, place them on the parchment lined baking sheets and flash freeze, You can put them in Ziploc bags after they are frozen. I put my Ziploc bags in plastic containers.

If freezing after baking, allow them to cool, place in the Ziploc bags and then into a plastic container.

How do I reheat the leftovers?

Place in the oven at 350 degrees on a baking pan until they are warm. About 10 minutes. Do not overcook.

In an air fryer, place your leftover sausage balls back in the basket until hot, usually about 10 minutes

Microwave, but this is the least preferred way. They can dry out easier.

Ingredients

  • 1 (8oz) package cream cheese softened
  • 1 LB ground sausage, mild or spicy
  • 1 (7.5oz) box bacon cheddar biscuit mix
  • 2 cups shredded cheddar cheese, mild or sharp
  • 2 cups dipping sauces as desired (optional) (ranch, hot mustard, Chic-Fil-A)

Instructions

  • Preheat oven to 350 degrees F. Line 2-3 baking sheets with parchment paper.
  • In a large mixing bowl, using an electric mixer, beat the cream cheese until smooth.
  • Add the uncooked sausage and beat into the cream cheese, just until combined.
  • Add the biscuit mix and the shredded cheese and combine all ingredients well. May use hands to do this step instead of mixer.
  • Use the size cookie scoop, or spoon you want the balls to be. Scoop dough and roll into balls. Arrange on baking sheet about 2-3 inches apart.
  • Bake the balls for 15-20 minutes, depending on their size. Bake until they are light golden brown.
  • Remove from the baking sheet onto a paper towel if they seem greasy.
  • Arrange on a serving platter. Set dips around the platter and serve.
