This recipe for ham salad sandwiches is quick and easy, only requires a few ingredients, and makes a perfect lunch or snack.
These ham salad sandwiches are made with cooked ham, dijon mustard, mayonnaise, swiss cheese, and sweet relish. I use leftover ham whenever it is available, such as after a holiday.
My mother always had fresh salads made when I was growing up, like chicken salad, EGG SALAD, cheese salad, bologna salad, and ham salad. They were so handy to have for a quick sandwich. I don’t make them as often as she did, but our family likes them all.
I make several variations to this, but wanted to share this one. It is unique because it has swiss cheese in it, and doesn’t have celery or onions.
I will frequently buy a pre-cooked ham from Walmart or Kroger (we love the Kentucky Legend Brand) to cut up and put in freezer bags. I cut them into cubes, diced, or strips. They can then be used in quiche, omelets, casseroles, or in a salad.
This is so convenient to have on hand, and cheaper than buying individual packages of ham. This is a good time to make a bowl of ham salad to have for sandwiches.
HOW TO MAKE HAM SALAD:
Assemble the ingredients:
Cooked ham
shredded swiss cheese
mayonnaise
dijon mustard
sweet relish
Cut ham into chunks. Place in food processor, pulse to chop into small pieces. Be careful not to chop it too much or it will become a paste like texture.
Place ham in a large bowl, add the cheese, 1 cup of mayonnaise, dijon mustard, and relish.
Gently stir ingredients together to combine well. Add small amounts of the extra mayonnaise if needed. Chill for at least 2 hours.
This is delicious served on any type of bread. My husband likes to eat it on crackers or bagel chips as a light snack.
Ham salad sandwiches are also fun to prepare on slices of mini party bread to serve at parties.
