TACO DIP WITH MEAT

I’ve been making this recipe since the 1970’s. Back in my early days of marriage and entertaining, I had a handful of go-to-appetizers, and this taco dip was always one of them. It is still just as popular today as it was back then.

This hearty , layered dip is packed with flavor–from seasoned ground beef, refried beans, lots of cheese, salsa, lettuce, tomatoes, and sour cream. It is perfect for game day, potlucks, or any casual gathering. 

 

 

How To Make Taco Dip with Meat

INGREDIENTS:

  • Ground beef
  • Taco Seasoning package
  • Water
  • Rotel
  • Refried Beans
  • Shredded sharp cheddar cheese
  • Salsa
  • Sour cream
  • Lettuce
  • Tomatoes
  • Scoops or Tostito Chips

INSTRUCTIONS:

1. Brown the ground beef in a 10-inch skillet. Drain grease.

2. Sprinkle the package of taco seasoning over the meat. Stir in the water and simmer for 10 minutes, stirring frequently.  Add the can of Rotel and continue to simmer the mixture for another 15 minutes, stirring frequently. Set aside.

3. Spray a 9×11 inch baking pan with no stick cooking spray.  Preheat oven to 350 degrees F.

4. Spread the can of refried beans  in the bottom of the dish. Spread the taco meat mixture over the beans.  Top the meat with 2 cups of the cheese, then the salsa over the cheese.  Spread the sour cream over this.  Place in the oven for about 15 minutes until meat is warm and cheese is melted.  (If you are not going to serve the dip immediately, you can refrigerate it, warm it up later, and then add the topping prior to serving.

5. For the topping: Arrange the shredded lettuce over the sour cream layer. Top with diced tomatoes and the remaining cheese.

Ingredients

  • 1 pound ground beef
  • 1 (1 oz) package taco seasoning
  • 3/4 cup water
  • 1 (10 oz) can Rotel
  • 1 (16 oz) can Refried beans
  • 3 cups sharp shredded cheddar cheese (divided)
  • 2 cups salsa
  • 2 cups sour cream
  • 1 1/2 cups lettuce, finely shredded
  • 2 small Roma tomatoes diced
  • 1 bag Tostitos Scoops (or corn chips)

Instructions

  • In a 10-inch skillet, crumble and brown the ground beef, Drain the grease.
  • Sprinkle the taco seasoning over the ground beef. Stir in the water and simmer over a medium heat for 10 minutes. Stir the mixture frequently.
  • Stir in the can of Rotel (do not drain). Simmer the mixture for 15 minutes over a low heat, stirring frequently. Set mixture aside.
  • ASSEMBLE THE TACO DIP
  • Spread the can of refried beans in the bottom of a 9x11-inch baking dish.
    Evenly spread the taco meat mixture over the beans.
    Sprinkle 2 cups of the cheese over the meat mixture.
    Spread the salsa and then the sour cream over the mixture.
    Top with lettuce, tomatoes, and 1 cup of the cheese.
  • Serve with Tostito Scoops or favorite Tostito Chips
