I love making tarts, quiche, and frittatas because they are so versatile and convenient. You can prepare them ahead of time, then simply warm them up when you’re ready to serve. This particular tart has become a favorite in our home, and my husband always gives it a big thumbs up.

Years ago, when my husband was involved in drag racing, I would send along meals that could easily be reheated in the RV at the track. This brunch tart was one of the recipes the guys always enjoyed—it travels well, reheats beautifully, and is filling without being too heavy.

MASCARPONE FILLED CRANBERRY WALNUT ROLLS

Mascarpone Filled Cranberry Walnut Rolls are a prize winning recipe for brunch. Refrigerated biscuits filled with mascarpone cheese, rolled in butter, cinnamon and sugar. Cranberries and walnuts added, baked and then drizzled with a mascarpone glaze.

In 2008 I was chosen as a finalist for the 43rd Pillsbury Bake-off Contest.  I cannot even express how exciting this was and what an unforgettable experience. My recipe was Mascarpone Filled Cranberry Walnut Rolls.

LOADED BREAKFAST PANINI

This loaded breakfast panini is perfect to start your day with, or to serve to guests for a special treat.

Leftover ham was the inspiration for my loaded breakfast panini.  My husband loves fried egg sandwiches, but doesn’t let himself eat them too often.  In the summer months he loves them with a slice of fresh tomato.  One morning while fixing breakfast, I saw the leftover ham in the refrigerator and put this sandwich together for him.

A loaded breakfast panini, meats, veggies, egg and cheese.On this day, I used sourdough bread, with  mayonnaise for my condiment.  Another day I made this on ciabatta bread and used basil pesto for the condiment.
