Sam Cross, my father, passed away in March, but the love and kindness he gave to everyone that knew him, will live on forever. Sam’s Homemade Hot Rolls are a part of his legacy. Continue reading SAM’S HOMEMADE HOT ROLLS
Cook-out ideas for small crowds.
Another summer holiday is upon us and our 4th of July celebration will look different since it will just be 2 of us this year. I am sharing some cook-out ideas for small crowds. Also including a recipe for potato salad for 2.
My husband and I are empty nesters, so I have learned to scale down my recipes frequently. Continue reading COOK-OUT IDEAS FOR SMALL CROWDS
Pimento Bacon Macaroni SaladPimento Bacon Macaroni Salad would be the perfect side dish to add to your Labor Day cook-out. This macaroni salad has a southern flair with the combination of a pimento cheese base, bacon and a little heat from the diced jalapenos.
This recipe for Baked Beans and Wieners is a classic, crowd-pleasing dish that’s perfect for upcoming cook-outs, picnics, and summer parties. Canned pork ‘n beans are dressed up with sliced beef wieners, onions, peppers, ketchup and brown sugar then baked until bubbly.

This has been a family favorite for years. When my children were growing up, it was always the one food they wanted on their plate. They still like this as adults, and my grandchildren enjoy it just as much.
I used a large can of beans for this recipe, but it can be adjusted for smaller portions. A small can of the beans can be used if fixing this recipe for 2 people.
Using a disposable aluminum pan works perfectly if you are transporting this dish to a cookout or picnic. I do use a nice baking dish if serving this as a side for a holiday meal.

Bush’s Original Baked Beans
onions
green bell pepper
ketchup
brown sugar
beef franks
Spray a large baking dish with no stick cooking spray. Preheat oven to 350 degrees F.
I always use Bush’s beans. In a large bowl or pan, combine the beans, onions, green bell pepper, ketchup, and brown sugar.

Cut the beef franks into pieces and stir into the beans. Pour into the prepared pan.
Bake for about 40 minutes, or until beans are hot and bubbly.
*One of the great things about this recipe is that it can be prepped ahead of time and baked when you need it. It can also be served hot or at room temperature.
*I have always served Baked Beans and Wieners as a side dish, but it could also be used as a main dish. Add a salad and some mashed potatoes for a comfort food, inexpensive meal.
*These are easy to transport to a cookout. Take them in a disposable aluminum pan and leave it.
*Every child in our family love this recipe.
*This recipe only uses a few ingredients.
After baking the beans, let them cool and then wrap tightly with aluminum foil, or place a lid on the pan, and keep in refrigerator. Reheat before serving.
Place leftovers in an airtight container and store in refrigerator for up to 3 days.
These can be reheated in the oven, on the stove, or in the microwave.
If you are planning a summer gathering these cook-out favorites pair perfectly with baked beans and wieners.

Creamed Tomatoes (Old Fashioned Tomato Gravy) is a true old-fashioned comfort food recipe that has been enjoyed for generations, especially here in West Virginia and throughout the south.
Fresh or canned tomatoes are simmered, then a cream sauce is added. This is served over biscuits or cornbread, or slices of bread are torn and stirred in after it is cooked. My family eats it with the bread in it. Continue reading CREAMED TOMATOES
