Fresh mini strawberry pies with whipped cream was one of the desserts I made a few times last month. I usually make the 9-inch size pie, but I made these mini ones for a special dessert one evening.
These beautiful pies can be served when you need an individual dessert with any dinner. They are also perfect to serve at a 4th of July gathering. Some people prefer a smaller pie like these, instead of a large slice. Continue reading MINI STRAWBERRY PIES

We are now having warm weather here and lots of fresh tomatoes. I created this recipe last summer and want to share it again. These were the best tomatoes from a local vegetable stand, and I had so many of them. I had never eaten or made a tomato tart but this recipe for Garden Fresh Tomato Bacon Tart was so good.
I love to make tarts, quiche, and frittatas. The varieties are endless, and they are so convenient. They can be made ahead of time, then just warmed up when you need them. I have made this garden fresh brunch tart several times, and my husband always gives it a big thumbs up. Continue reading GARDEN FRESH BRUNCH TART
Frozen Potatoes O , spicy sausage, sour cream, butter, jalapenos, and lots of cheese makes this Firecracker Potato Casserole a great addition to your 4th of July cookouts.
Our family loves the traditional cheesy, hashbrown casserole and we have it at every get together. I like to try some variations and went with this spicy recipe for an extra side dish. It really was a big hit. Continue reading FIRECRACKER POTATO CASSEROLE
