This recipe is a fun one to make, especially when you have delicious, fresh strawberries. It is quick, easy, and anything with mascarpone cheese in the filling has to be wonderful.

BREAKFAST IDEAS FOR ST PATRICK’S DAY

These St Patrick’s Day breakfast ideas are like diving into a little pot of gold at the end of the rainbow.

The children and grandchildren will be celebrating this fun holiday with a lot of sweet treats today, so I have some ideas to start their St Patrick’s Day breakfast on a healthier note.

I love to serve foods in individual  dishes.  They look more appealing and it is a good way to practice portion control.   I  use my ramekins or mini cast iron skillets for individual servings.breakfast, eggs, cheese

MASCARPONE FILLED CRANBERRY WALNUT ROLLS

Mascarpone Filled Cranberry Walnut Rolls are a prize winning recipe for brunch. Refrigerated biscuits filled with mascarpone cheese, rolled in butter, cinnamon and sugar. Cranberries and walnuts added, baked and then drizzled with a mascarpone glaze.

In 2008 I was chosen as a finalist for the 43rd Pillsbury Bake-off Contest.  I cannot even express how exciting this was and what an unforgettable experience. My recipe was Mascarpone Filled Cranberry Walnut Rolls.

LOADED CRUSTLESS MINI BREAKFAST SOUFFLE

The past year I have been making this breakfast  souffle  and wanted to share the recipe.  My husband wants to cut back on carbs, so a crustless breakfast dish is just perfect.

A lower carb, breakfast souffle loaded with eggs, veggies and cheese.

My recipe is a basic one but you can individualize your soufflé by adding any ingredients you have available.  My grand-children enjoy making their own.  I just set up little bowls with ingredients that I know they like, and they fill their dishes with what they want.  This is a good recipe for the children to make because you do not have to be exact with the measurements and they will eat it because they made it themselves.
